Brazilian Kale and Mango salad, known as Salada de Couve com Manga. This recipe incorporates kale and mango, two of the most popular ingredients in Brazilian cuisine. This is a super healthy and nutritious Brazilian style salad which is light and easy to make without a fuss.
1 bunch kale chopped
1 tablespoon lemon juice
1/4 cup olive oil
1 mango chopped
1/4 cup Pine nut
Salt and pepper to taste
1) Begin by chopping the kale into pieces and sauting it in a pan with a tablespoon of the olive oil for 3-4 minutes or until the kale has wilted a bit.
2) Once done, in a bowl, add the kale from the pan, chopped mango, and pine nuts.
3) Toss them together and add the rest of the olive oil, the lemon juice, and salt and pepper to taste.
4) Toss the salad one more time and serve.
