Farofa de Cenoura is a Brazilian Carrot Farofa, a unique variation on the popular Brazilian Farofa dish. Farofa is one of the most signature sides in Brazilian cuisine, and this is a flavorful and richly tasting variation of Farofa with the addition of carrot. It is simple and easy to make, and perfect for serving with meats, rice, and beans.
3 carrots, chopped
1 onion, chopped
2 garlic cloves, chopped
2 cups Cassava flour (If you can’t find this locally, you can buy some here on Amazon)
Salt to taste
3 tablespoons butter
1) Place the butter in a saucepan, when melted add the garlic and onion until they brown. When they are browned turn off the heat.
2) In a bowl place about two cups of cassava flour and add the mixture from the saucepan and mix it well.
3) Add the carrots to a blender and blend them until smooth and even consistency.
4) When well blended add the carrots to the bowl along with salt to taste and stir it well. Serve.
